Does aluminum foil boost a WiFi Router signal? Can putting aluminum foil behind a router improve WiFi coverage?

Yes, placing aluminum foil behind a WiFi router can improve signal strength only in a specific direction by reflecting radio waves, similar to how a flashlight reflector directs light.

It does not boost a WiFi router signal in the way a wifi extender or mesh system does.

The improvement, however, is usually small and depends on your router's location, and does not increase the router's actual power.
